The dinner formula that works for us in busy times is to have a moderate sized portion of a tasty main, accompanied by a delicious and interesting salad or vegetable dish and a huge mound of raw or blanched vegetables with the occasional dessert thrown in. Serving a moderate portion of the main is great because it means that you will have leftovers. Doing this also means that you are eating less of the calorie dense foods that are higher in fat and salt. The interesting salad enables you to challenge your children’s taste buds and provide more colours flavours at dinner time.
Prepare as many dishes such as chicken schnitzel, any of the meatballs, taco sauce and any of the tomato sauces on the weekend and freeze until needed. These dishes in particular, freeze well.
Each of the kid-friendly recipes is presented in its simplest form to minimise the amount of time required to prepare the meal. I have also added more options where possible to improve the taste of the dish.
