Italian Meatball Subs
Inspired by a famous deli/sandwich bar in the Strand Arcade in Sydney, you will want to add these delicious meatball subs to your menu.

Hacks: Make the meatballs ahead of time and refrigerate them. Use a few small dollops of Leggo’s Pizza Sauce Tomato Paste instead of the home made sauce, use pre-sliced mozarella or swiss cheese, use the shredded lettuce and forget all other ingredients. Assemble by placing the meatballs on the base of the bread, spread a few small dollops of the pizza sauce over the meatballs, place the cheese over the sauce and microwave for 30 seconds or grill for 2-3 minutes. Place the shredded lettuce over the cheese, close the sub and eat away.
Super hacks: Make only the meatballs, shred some lettuce, splodge a few drops of over the meatballs,
Meatballs That Work, 1 batch
Eggplant Meatballs, 1 batch
Italian Tomato Sauce Crudo or Cannelloni Tomato Sauce
Crumbed zucchini, 1 batch
Iceberg lettuce, 2 cups, shredded
Mozzarella cheese, 1 1/2 cups, grated or sliced
Button mushrooms, sliced and fried in butter and oil
Avocado, sliced in long thin slices
Turkish pide, 2 loaves
Assemble the subs in the following order:
Slice turkish bread into 15 cm wide pieces and sliced each piece through the centre.
Place meatballs or eggplant meatballs on the base of the turkish bread.
Spoon over some sauce, to taste.
Sprinkle some cheese over the sauce, to taste.
Heat in the microwave for 30 seconds to melt the cheese.
Remove from the microwave and place 1 piece of crumbed zucchini (cut in half) over the cheese.
Sprinkle over a handful of shredded lettuce.
Place a handful of mushroom over the lettuce.
Place a few slices of avocado over the mushroom.
Place the turkish bread lid on top and eat.
Try this with char-grilled capsicum avocado salsa and sliced pickles in addition to the fillings above.
Try this with slices of swiss cheese or manchego cheese or asiago cheese.
