Beef Fillet - Roast

1.2kg very good quality grass fed eye fillet
Butter, 80g

Preheat oven to 160 degrees celsius.
Sear the beef in melted butter, brown and caramelise on all sides. I sear in a baking pan.
Roast for 30 minutes. Turn over off, leave fan on. Leave the door ajar and leave to rest for 10-15 minutes.
PERFECT and EASY.
The girth is all that matters re cooking time, the length doesn’t impact cooking time. Average girth is around 8-9cm. Ask the butcher when purchasing. It is better to buy at a high quality butcher.
