Frittata with Kipfler Potatoes and French Shallots
Buy or find
French Shallots, 5, peeled and chopped
Kipfler potatoes, 250g, washed and boiled for 20-25 minutes. You don’t want them to be overcooked
Eggs, 5, whisked gently
Dill, 2 tbs, chopped
Salt and Pepper to taste
Butter and oil for cooking
Do
Fry, then sweat, the shallots in butter and oil.
Chop the potatoes into 2 cm slices when cool.
Fry the chopped potato in butter and oil until browned.
Season with salt and pepper to taste.
Combine the eggs, shallots, and dill in a frying pan.
Fry on medium heat until the base is cooked.
Place under a hot grill to cook the top.
You can add sour cream and or cheese to the egg mixture if you like.
Works very well without dairy for the dairy free eaters.
Great served with garlic butter or garlic tarragon butter.
