Toastie with Gouda Omelete, Avocado and Pesto

Eggs, 3
Gouda cheese, 1 slice
Sourdough or soft white bread, toasted
Avocado, sliced
Pesto dip, to taste
Fried crumbed zucchini
Butter

Make and omelette the usual way, placing a slice of gouda inside just slightly before the egg has set. Fold in half.

Smear one slice of toast with avocado and add salt to taste.

Cut a portion of the omelette into shape to match the shape of the bread. Place on bread, add zucchini.

Smear pesto dip on the other slice of bread and eat!
