Pasta Queen Mushroom Pasta with basil oil

Fry 2 large shallots and fresh thyme in ev oil and butter
Add very thinly sliced mushroom
Cook pasta
Add some pasta water
Remove thyme
Scrunch of pepper
Combine some washed fresh basil with oil and puree

Add the puree to the mushrooms over mild heat and add pasta then add Reggiano and some more pasta water if needed. Great with blistered tomatoes. Also try adding a small amount of lemon peel to the puree. You can also serve the puree separately.

Remember the trick of cooking the pasta just prior to it becoming al dente and soak it in cold water until needed. Warm it up by pouring boiling water over the pasta then add the pasta to the sauce and fry to combine and thoroughly warm without overcooking it.
