Pea, Leek and Shallot Pasta Mix-in

Peas, fresh and shelled, or frozen, 150 - 200g
Garlic, 1 clove, crushed
Shallots, 4, peeled and sliced
Leek, 1, sliced
Thyme leaves, fresh, 1/2 bunch
Butter, 70g

Melt and butter and add, leek, shallots, salt and pepper (to taste) and fry over medium heat until partially caramelised.

Add the peas and garlic and continue to cook for several minutes, or until the peas are soft.

Partially mash the mixture and add to cooked pasta with extra butter and parmesan, or mix in with other pasta sauces, such as passata or napolitana.
