Simple Curry Mince and Rice

500 g Woolworths Beef Mince
1 onion (diced)
1 carrot (diced)
1 apple (grated,peeled)
1 capsicum (diced)
1 zucchini (diced)
50 g chicken noodle instant soup
1 tbs curry powder
2 tbs vinegar
1-2 tbs polenta
1 tbs brown sugar
3 cups water
Tomato paste, 2 tbs

In a frying pan, heat the olive oil and cook the mince and onion. Add the capsicum, carrot and apple.

Add the curry powder and fry off for 2 minutes. (Maybe use less curry.)

Add the rest of the ingredients and bring to the boil.

Simmer for 20 minutes.

Serve with jasmine rice.

Works well with quorn rather than mince.
Try adding some finely chopped womb cabbage.
