Chocolate and Sour Cherry Brownies from Sabzi
Flax seed meal, 2 tbs
Dark Chocolate, (70%), 200g, broken into pieces
Vanilla Extract, 1 tsp
Plain flour, 130g
Almond meal, 75g
Caster sugar, 225g
Cocoa powder, 2 tbs
Baking powder, 1/2 tsp
Vegetable oil, 80ml
Plant based milk, 80ml
Sour cherries, dried, 55g, chopped
Preheat oven to 150 degrees celsius.
Grease a 20cm-square baking tin and line with baking paper.
Mix the flax seeds and 100ml water in a small bowl and set aside for 5 minutes to firm up into a gel-like substance.
Melt chocolate in a microwave, heating in 20 second bursts, stir and burst again. Make sure you don’t burn the chocolate. Leave to cool slightly. Add the vanilla.
Combine the flour, ground almonds, sugar, cocoa powder, baking powder, and 1/2 tsp salt in a tart bowl. In a separate bowl, combine the oil, flaxseed oil and milk. Pour the chocolate into the dry ingredients. Add the oil mixture.
Stir until well combined, but don’t overmix
Add the cherries and fold into the batter.
Spoon the batter into the baking dish, smooth with a spoon.
Bake for 25 to 30 minutes, or until the brownies are cooked.
Leave to cool completed in the tin before slicing into squares.
