Fast Chana Masala
Olive oil, 1 tbs
Spring onions, 4, washed, trimmed and sliced
Garlic, 2 cloves, crushed
Ginger, 2cm piece, peeled and grated or finely chopped
Chopped tomatoes, 1 can
Tomato paste, 1 tbs
Garam masala, 3/4 tsp
Turmeric, 1/4 tsp
Chilli flakes, to taste
Chickpeas, 1 can, drained and rinsed
Fry the spring onions in oil until soft in a frying pan.
Add ginger and garlic, saute for a few minutes to soften.
Add the tomatoes and tomato paste and 1/2 tsp salt, simmer for a few minutes.
Add the remaining ingredients and simmer of medium heat for 10-20 minutes, or to taste.
Serve with rice and yoghurt or on grainy sourdough toast.
