Hearty Prune and Bean Stew

Olive oil, 1 tbs
Spring onions, 6, washed and finely sliced
Garlic, 2 cloves, crushed
Chilli flakes, to taste
Cumin, ground, 1/2 tsp
Button mushrooms, 125g, sliced
Red kidney beans, 1 can, drained and rinsed
Prunes, pitted, , 80g, sliced
Tomato paste, 2 tbs
Chopped tomatoes, 1 can
Salt and pepper to taste

Fry the spring onion in oil until soft over medium heat.

Add garlic and chilli and fry for a minute.

Add the remaining ingredients, cover over medium high heat for 35-40 minutes.

Serve with pasta or brown rice.
